Recently I made fish tacos for family and they loved it. I thought I would share the recipe and some variations my husband and I came up with. I used Tilapia and marinated it in one can of Bud Light Lime-A-Rita. For those who are unfamiliar with this beverage its a combination of beer and a Margarita. Marinating in the beer makes the fish moist and adds a subtle lime flavor. You can grill the fish or sauté it over medium high heat. We had Soft Corn Tortillas warmed in a frying pan with just a touch of oil in the pan. Just to give you an idea we topped our fish tacos with guacamole, salsa, a squeeze of a lime wedge and Mexican cheese. I served the tacos with cilantro and lime sweet corn and red beans and rice. Enjoy!
